Butternut Squash Casserole

This recipe came from an unlikely source: Runner's World magazine. Nevertheless, it's a tasty and very easy way to make up a butternut squash.
Ingredients
- 1 medium butternut squash, cut in half lengthwise, with seeds removed
- 2 tablespoons light margarine or 1 tablespoon olive oil
- 6 whole-grain crackers, crumbled
- 3 tablespoons grated parmesan cheese
- 3/4 teaspoon garlic powder or 1 teaspoon fresh crushed garlic
- Salt and ground black pepper, to taste
Preparation
- Sprinkle the flesh side of the cut squash with salt and pepper and place cut-side down on a foil-lined baking sheet. Place in a pre-heated 350 degree oven for 45 minutes.
- Remove from the oven and let the squash cool for five minutes. Then, scoop out the insides like mashed potatoes into a casserole dish.
- Stir in the rest of the ingredients and serve warm.
