Butternut Squash Casserole

This recipe came from an unlikely source: Runner's World magazine. Nevertheless, it's a tasty and very easy way to make up a butternut squash.

Preparation

  1. Sprinkle the flesh side of the cut squash with salt and pepper and place cut-side down on a foil-lined baking sheet. Place in a pre-heated 350 degree oven for 45 minutes.
  2. Remove from the oven and let the squash cool for five minutes. Then, scoop out the insides like mashed potatoes into a casserole dish.
  3. Stir in the rest of the ingredients and serve warm.
