Chinese Greens
Vegetarian
You can use any greens in this fast side dish. Serve with white or brown rice. Serves 4 to 6.
Ingredients
- 3 T. vegetable oil
- 1 large garlic clove, minced or pressed
- 1/2 tsp. grated fresh ginger root
- 6 to 8 cups washed, stemmed and chopped greens
- 1/4 cup dry sherry or Chinese rice wine
- 1 T. vinegar or fresh lemon juice (optional)
- 1 tsp. sugar or honey
- 2 T. fish sauce or tamari soy sauce
Preparation
Heat the oil in a wok or heavy skillet and add the garlic and ginger root. Sauté very briefly. Add greens and toss to coat with oil. Add sherry or wine, vinegar or lemon juice, honey or sugar, fish sauce, and a splash of water. Continue sauteing. Cook until tender (5-10 minutes). If you use tamari instead of fish sauce, add it just before serving.
