Tzatziki Sauce
Vegetarian
Makes 1 cup.
Ingredients
- 1 C. finely chopped seeded peeled cucumber
- 1/4 tsp. salt
- 8-oz. plain low fat yogurt
- 1 1/2 tsp. chopped fresh parsley
- 1/2 tsp. fresh lemon juice
- 1/2 tsp. olive oil
- 1/8 tsp. black pepper
- 1 garlic clove, minced
Preparation
- Place cucumber in colander over a small bowl; sprinkle with salt. Toss gently to coat. Cover and chill 1 hour. Rinse with cold water and drain well. Squeeze until barely moist.
- Spoon yogurt onto several layers of heavy-duty paper towels, spread to 1/2" thickness. Cover with more paper towels; let stand 5 min. Scrape into a bowl using a rubber spatula.
- Combine cucumber, yogurt, parsley, and remaining ingredients in a bowl. Chill.
