Vegan Chard Muffins

"I have never really liked chard, but this is a great vegan recipe that makes it delicious!"

Ingredients

Preparation

  1. Preheat oven to 400 degrees.
  2. Steam, chop, and squeeze the water out of the chard.
  3. Mix soymilk, maple syrup, and vanilla extract.
  4. In a separate bowl, mix flour, sugar, cinnamon, baking soda, baking powder, and salt.
  5. Mix together all ingredients. Fill greased muffin pans about 2/3 full. Bake for 20-25 minutes.
