Vegan Chard Muffins

"I have never really liked chard, but this is a great vegan recipe that makes it delicious!"
Ingredients
- 1 bunch of chard
- 1/2 c. soymilk
- 1/4 c. maple syrup
- 2 tsp. vanilla extract
- 2 c. flour
- 1 1/2 c. sugar
- dash of cinnamon
- 1 1/2 tsp. baking soda
- 1 tsp. baking powder
- dash of salt
Preparation
- Preheat oven to 400 degrees.
- Steam, chop, and squeeze the water out of the chard.
- Mix soymilk, maple syrup, and vanilla extract.
- In a separate bowl, mix flour, sugar, cinnamon, baking soda, baking powder, and salt.
- Mix together all ingredients. Fill greased muffin pans about 2/3 full. Bake for 20-25 minutes.
