Sweet Potato Pancakes

Ingredients
- 1 large sweet potato, peeled and sliced thinly
- 2 medium red potatoes, peeled and sliced thinly
- 1/2 cup soft bread crumbs
- 2 T. ricotta cheese
- 2 t. maple syrup
- 1 t. cumin
- pinch of cinnamon
- pinch of nutmeg
Preparation
Boil potatoes and sweet potatoes separately, until soft. While still hot, mash together in a big bowl. Mash in remaining ingredients. Use hands to pat mixture into six cakes. Heat up a non-stick skillet. Cook pancakes until bottoms are brown, flip. Serve hot, at room temperature, or cold, with unlimited creative toppings: chutneys, relishes, salsa, spicy beans.
