Gina Scalcione’s Marinara Sauce
Vegetarian
You can prepare this sauce with chopped hot peppers or portobello mushrooms. Add them to the pan with the garlic and cook for 5 minutes until soft. Makes about 2 cups.
Ingredients
- 2 T olive oil
- 3 cloves finely chopped garlic
- 2 T chopped parsley
- 2 T chopped fresh basil
- 1 lb. chopped tomatoes
Preparation
In a large skillet, heat the oil and cook garlic over medium heat until soft. Add parsley and basil and cook 2 minutes more. Add tomatoes and simmer, uncovered, for 15 minutes or until the sauce thickens slightly. Serve over linguine or other pasta.
