Baked Garlicky Winter Squash (Butternut, Buttercup, Hubbard)

Ingredients
- 1 squash, peeled and cut into 1 inch cubes
- 1/3 cup olive oil
- 2 cloves garlic, minced
- 2 t. minced fresh parsley
- salt and pepper to taste
- 1/3 cup grated Parmesan cheese
Preparation
- Preheat oven to 400 degrees.
- In a large bowl, toss together the squash, olive oil, garlic, parsley, salt and pepper.
- Spoon vegetables into a shallow baking dish.
- Sprinkle on Parmesan cheese.
- Bake for one hour, or until the squash is tender, but not mushy.
