Swiss Chard and Tomatoes
Vegetarian
A recipe adapted from an Italian grandmother.
Ingredients
- 2 T. olive oil
- 4 cloves garlic, minced
- 1 tsp. finely chopped fresh red chili pepper (or a pinch of crushed red pepper)
- large bunch Swiss Chard, any color, washed and coarsely chopped
- 3 medium tomates, peeled, seeded, and coarsely chopped
- salt and pepper
Preparation
Saute garlic and chili pepper in oil (2–3 minutes). Stir in chard in batches, allowing chard to wilt down before adding next batch. Stir in tomatoes, cover, cook, stirring occasionally, until chard is tender. Add salt and pepper to taste and serve hot.
