Zucchini Pancakes

Ingredients

  • 12 ounce zucchini, shredded
  • 1 teaspoon chopped Italian herbs (parsley/basil/rosemary/thyme)
  • 3/4 cup buttermilk pancake mix
  • 1 cup water

Directions

Combine all ingredients. Fry them up into 10  3-inch pancakes on a hot griddle and serve them as a delicious side dish. Source: CSA Member, Ellen Sullivan
